In case you missed The Seattle Times this weekend, Pacific Northwest magazine gave a shoutout to Maple Leaf’s own Judy Fu’s Snappy Dragon, including a recipe for the legendary dumplings.
Officially known as Judy Fu’s Pork Jiao-zi (pronounced jow-zuh), the namesake herself still can be seen most nights working away at her restaurant at age 71, divulges writer Nancy Leson.
And the secret to the perfect jiao-zi? Cake flour!

I might, but I usually have a bag of frozen ones on hand. I also have the Hot & Sour soup recipe, and make it often. But, it never comes out as good as theirs. So, since I’m in the delivery area (YAY!) I’ll probably stick to that.
I am excited to try these at home. I always bring my out of town guests to Snappy Dragon for the real deal.
