In the pursuit of the secret recipe for Cloud City Coffee‘s Coconut Bread, blogger Lara Alexander unearthed future plans the Maple Leaf cafe, located at 8801 Roosevelt Way N.E., has to publish its own cookbook.

Alexander, who writes the blog “Food. Soil. Thread.,” recently tried in vain to obtain the recipe that she calls the Best Coconut Bread in the World. She writes:
When I asked the barista if he would share the recipe with me, he smiled as though this was a common question, and then said “no.”
But she wasn’t about to let her pursuits stop there. She dissected the bread and scoured the Internet for similar recipes, then conducted a blind taste test with four other recipes she found and baked herself against Cloud City’s prized Coconut Bread.
As I predicted, Cloud City Coffee’s coconut bread netted the Gold Ribbon, confirming its position as Best Coconut Bread in the World!
But Alexander also got a close second that she shares on her post and even muses whether the recipe itself came from the “the anonymous friend who shared the original recipe and swore the baker to secrecy.”
Shortly after posting, CCC girl wrote in the comments:
Close, but no cigar! A coconut bread recipe will be revealed in good time via a Cloud City Cookbook. The lore holds true- I did trade recipes and vow not to share. However, I have since found the recipe in other cookbooks- and it seems selfish not to share! With any luck, you’ll see a book by Christmas. In the meantime, the recipe exists, and perhaps you’ll come across it in your culinary travels!
Had a recent trip to Seattle and came across this charming little coffee shop, did they ever publish a cookbook? Craving that coconut bread is a fire real (good) problem.
I REALLY hope they include the wheat-free bars recipe. 🙂 I love those and so do my kids. The quiches are so good too. This is a MUST HAVE cookbook for sure. Thanks for the head’s up!
